I tend to leave cars and trees intact if it can be helped. You can really do some cool/creative stuff with some of the junk laying around the settlements once you learn how to work with the snap-to-grid system, and start layering floor panels in a way to create interesting geometry.

Depends on item...although i do wish i could simply scrap anything from workshop place, maybe with an option to check certain things if an item contains it, like steel or wood. Some places take a frikking long time to scrap.
