Just ignore the settlement BS as much as the game will allow you and enjoy playing and exploring.
Does SimSettlements have auto build?
I believe SimSettlements has an auto-build feature, part of Rise of the Commonwealth. You should be able to enable that and then put everything on the easiest/auto-manage settings and they will simply build themselves over time.
Can you remove the quest from the main quest?
No way to remove it entirely as it would break the main quest because of that one thing that needs to be built to reach the institute.
Can you complete the main quest without settlement building?
No, because it would break the game. Without settlement building, you can't complete the main quest. That's just dumb.
Do you need to build a settlement to complete the main quest?
Then when needed for main quest, all the materials gathered by settlers ready to go. You don't need to build settlements to complete the main quest. You need to build some things for a part of the main quest but that isn't settlement building.
